I have to admit the Farmer’s Salad is one of my favorite salads that I could eat and eat all by myself. It is also one of the easiest salad to make and is really good to take on family outings or parties in fact you have probably already had this at some time or another but I thought I would just share it in case you haven’t.
1 head iceberg lettuce torn into bite-size pieces
1 head fresh broccoli florets
3/4 cup Hampton Creek Just Mayo
3 tablespoons white sugar
1 tablespoon distilled white vinegar
1 pound bacon
Over medium heat, brown bacon, drain and crumble into bits. In a large bowl, combine the lettuce and broccoli. Prepare the dressing by whisking together the salad dressing, sugar and vinegar. Pour dressing over lettuce mixture and toss evenly to coat then sprinkle bacon over the top and refrigerate until chilled. Serve cold. Prep time is approximately 10 to 15 minutes and the salad serves 8.
I want to talk about a product called Just Mayo. Hampton Creek produces a product where the taste is just like mayonnaise but is much healthier and is way less expensive than the traditional mayonnaise. Just Mayo has become my favorite brand of mayonnaise because it is actually healthy for you and if you like mayo on your burger or turkey sandwiches I figure it is better to be healthy than not. You don’t lose the flavor either. I don’t know how they do it but it is far better than regular ole mayo.
You can get Hampton Creek Just Mayo at Target stores, Walmart, and Earth Fare. Hampton Creek Just Mayo comes in a variety of flavors as well. My favorite is Garlic, but you can get Chipolte, and Sriracha as well.
Now tomorrow, I will have a wonderful salad or dessert as we sometimes call it because it has fruit as well as pasta. Now the name might scare you but trust me, it is nothing like it sounds. So until tomorrow, Think Spring.
