Crunchy Apple-Pecan Slaw

The Crunchy Apple -Pecan Slaw sounds so divine and mouth watering I can’t wait to pick up some fresh cabbage at the market to try it.  I love pecans and apples and the thought of putting them in any slaw or tossed salad makes my day.  Here is a recipe for a lovely crunchy apple pecan slaw:

Crunchy Apple Pecan Slaw

5 cups shredded cabbage

2 sweet apples, diced

1/2 cup coarsely chopped pecans, toasted

1/2 cup golden raisins

3 green onions, chopped

1/2 cup mayonnaise

1/2 cup 1% buttermilk

1 tablespoon lemon juice

1 tablespoon honey

pepper to taste

In a large bowl, toss the cabbage, apples, pecans, raisins and onions.  In a smaller bowl mix the remaining ingredients and pour over cabbage mixture.  Refrigerate until ready to serve.  A 3/4 cup serving has approximately 143 calories 3 g fiber, 2 g protein, 118 mg sodium and 17g carbs.  This is a very lite tasting slaw with all the benefits of fresh vitamins, protein and delectable  flavor and would be great for all the upcoming outside festivities this summer.  Oh Oh Oh! placing this Crunchy Apple Pecan Slaw on top your burger looks very good.  Wouldn’t that be a nice treat at your BBQ this summer?
